BBQ Chicken Flatbread Pizza


2 Flatbread Pizza Crusts
2 Chicken Breasts
6-8 Mini Sweet Peppers (thinly sliced)
1 Red Onion (thinly sliced)
1.5 Cups Mild Cheddar Cheese
1.5 Cups Jack Cheese
1 Bunch Of Cilantro
Olive Oil
Salt and Pepper

Bourbon BBQ Sauce Ingredients:

1 cup Ketchup
1/3 Cup Bourbon Whisky
2 Tbsp Garlic (minced)
2 Tbsp Shallot (minced)
3 Tbsp Apple Cider Vinegar
2 Tbsp Worcestershire sauce
1 Tbsp Pure Maple Syrup
1 tsp Hot Sauce
1/4 cup Brown sugar
Salt and Black Pepper

In a medium sauce pan on medium heat, add the shallots, garlic and whisky. Simmer and reduce by 1/2. Add the rest of the sauce ingredients and whisk until combined. Let the sauce simmer and reduce for at least 20 minutes or until thickened. Season to taste with salt and pepper then set aside.

Cut the chicken breasts into cutlets and season with salt and pepper on both sides. Grill or cook the chicken in a cast iron pan with a little oil until the internal temperature of the chicken reaches 165 degrees Fahrenheit. Let rest for 5 minutes then slice.

Building the flatbread pizza: lay the flatbreads on a wire rack on top of a baking sheet. Start by spreading a generous amount of the bbq sauce on each flatbread. Evenly top with grilled chicken, sliced peppers, red onion, and cover with cheese. Bake in the oven set to 425 degrees Fahrenheit for 10-15 minutes depending on if you want soft or crispy crust. Once cooked let cool for a few minutes then top with some chopped cilantro leaves.

Slice and serve!
